Get in my belly

Quick post, I promise.
So, this is by no means a recipe blog. The world does not need one more of those, although there are some fabulous ones out there.
So, when I do post a recipe every now and then, it's only because it's for something I really love that I hope you might really love too. It is NOT because I made it up, which I can guarantee I did not. This one happened to come from a friend. But I have cooked it and devoured and possibly even licked the bowl because it was so darn good....maybe.

So, if it's as cold where you are as it is where I am, then maybe you'd like some of this tonight:

Baked Potato Soup
1/4 cup butter
1 cup chopped onion
1/4 cup flour
14 oz. can of chicken broth
1 can evaporated milk (I use the fat free kind. Just thought I'd throw that out there for those of you who'd still like to fit in your jeans come January, which I most certainly would.)
2-3 large baked potatoes
salt and pepper to taste
bacon, cheese, and sour cream

Melt the butter and saute the onion. Stir in flour and add the liquids to a large pot. Scoop the pulp from one potato, mash, and add to soup mix. Bring this to a boil, and then add the rest of the potatoes-- cut into cubes. Top with bacon, cheese, and sour cream, eat, and enjoy.

And I suggest you give these a try for dessert. Oh my stars, I am in love with them.


However, Hollyn prefers eating the wise men from her nativity scene.

What can I say--- to Hollyn, everything is food....even plastic little men...and camels.
